A showcase of Hobart Pass-Through Dishwashers

Which Hobart Pass-Through Dishwasher Is Right for Your Kitchen?

There is a point in most commercial kitchens where an undercounter dishwasher stops being the right tool. The volume is there, the pressure is there, and the machine either cannot keep pace or the team is constantly waiting on it. A pass-through dishwasher solves both problems at once.

How a pass-through dishwasher actually works

Understanding the workflow is the best starting point, because the efficiency of a pass-through comes from the system as much as the machine itself.

Pre-Scrape & Rinse (Inlet Table): Dirty items arrive on the inlet table. Food waste is cleared into a pre-scrape bin, and items are pre-rinsed using an overhead spray arm.

Continuous Slide: Once loaded, the operator simply slides the wash rack directly along the track into the dishwasher, no heavy lifting required.

The Wash Cycle: The operator pulls down the hood to automatically start the wash program.

Unload & Sort (Outlet Table): When finished, the hood is lifted, and the clean rack slides out the opposite side onto the outlet table to air-dry and be sorted. Meanwhile, the next dirty rack is already sliding in.

That continuous flow is what makes a pass-through so effective. There is no lifting fully loaded racks in and out of a single door. There is no bottleneck where a team member is waiting with dirty ware while the machine is still occupied. The work moves in one direction, smoothly and consistently, and the pace of the kitchen dictates the pace of the wash rather than the other way round.

Straight-through AMX unit

Every Hobart pass-through dishwasher can be configured to run left to right or right to left depending on your kitchen layout and can be installed in a straight run or corner-mounted, giving genuine flexibility when fitting around an existing space. Getting the layout right from the start, with the correct inlet and outlet tabling, is one of the most important parts of a pass-through installation. The machine can only perform as well as the workflow it sits within.

If you are still deciding whether a pass-through or undercounter is the right format for your kitchen, our pass-through vs undercounter guide covers that in full.

Quick guide: which Hobart range fits your operation?

Ecomax: The starting point for smaller operations stepping up from an undercounter, or sites with moderate, predictable volume.

Ecomax Plus: Built for busier kitchens needing a broader specification and lower running costs across sustained daily use.

Profi AMX: The professional workhorse for high-volume kitchens requiring advanced filtration, GENIUS-X² technology and remote monitoring.

Profi AMXX: Greater throughput and a more powerful wash system, built for heavy soiling and high utilisation. The AMXXL adds an XL wash chamber for large-format ware.

Premax AUP: The highest-specification pass-through, with ASR automatic soil removal, the fastest cycle times in the range, and the option of drain heat recovery. The AUPL adds the XL wash chamber for large-format operations.

Start with an honest picture of your daily workload

The most important factor in choosing a pass-through dishwasher is not the spec sheet. It is an accurate picture of how hard your machine is going to work every day.

A school kitchen running two sittings of 200 covers is a different proposition to a hotel kitchen running breakfast, lunch and dinner service seven days a week with a team loading the machine continuously throughout. The Ecomax is more than capable for the former. Placing it in the latter and running it beyond its design parameters will show up in results, recovery times and reliability over time.

Ecomax H604: the pass-through starting point

The Hobart Ecomax H604 is available in two variants:

The H604 is a straightforward, well-built machine for operations that have outgrown an undercounter but do not need the specification of the heavier ranges. It includes a four-sided fully enclosed hood as standard, a feature shared across the entire Hobart pass-through lineup that retains heat and steam energy within the machine during operation, reducing the need for extraction and contributing to a more comfortable working environment. Standard equipment also includes a built-in drain pump, detergent and rinse aid dispensers, and digital temperature display.

At 48 racks per hour the H604 handles steady throughput comfortably. It is a capable machine for smaller restaurants, cafes stepping up in volume, care homes where kitchen demand is consistent but not relentless, and education catering at a moderate scale.

The H604S adds an integrated water softener, strongly recommended in hard and medium-hard water areas for protecting heating elements and maintaining consistent wash results long term. External water softeners are also available as an alternative option.

Hobart Ecomax H604

Ecomax Plus H615: a broader specification for busier kitchens

The Hobart Ecomax Plus H615 is available in two variants:

  • H615: 500×500mm rack, 440mm loading height, up to 60 racks per hour
  • H615S: as above, with integrated water softener

The step from the H604 to the H615 is a meaningful one. Throughput rises from 48 to 60 racks per hour, which across a full service makes a considerable difference to how the kitchen flows.

The H615 features the INTENSIV wash system with VECTOR wide-angle wash jets, delivering a powerful, thorough wash action across the full rack. A more robust wash pump drives separate upper and lower wash and rinse arms for comprehensive coverage, supported by a two-stage filter system that helps prevent blockages during sustained operation. ACCURINSE uses just 2.2 litres of fresh water per rinse cycle, saving up to 30% on water, energy, detergent and rinse aid costs. Three speed cycle options give the operator flexibility to match the programme to the load and pace of service. Drain pump and dosing equipment are included as standard.

The control panel is positioned at the top of the hood, making it easy to read and operate from any position including when the machine is corner-mounted. The full wraparound handle makes the hood straightforward to operate regardless of where the operator is standing, which is a practical benefit in a busy kitchen where the team may be working from either side.

For busy independent restaurants, hotel kitchens at moderate volume, and public sector catering sites running regular mealtimes, the H615 is the natural choice. It is built to sustain reliable performance through long services and gives operators genuine running cost savings through its water and energy efficiency.

Hobart Ecomax Plus H615

Profi AMX: professional performance for high-volume operations

The Hobart Profi AMX is available in three variants:

  • AMX: 500×500mm rack, 440mm loading height, up to 60 racks per hour
  • AMXS: as above, with integrated water softener
  • AMXR: as AMX, with drain heat recovery
  • AMXRS: as AMX with drain heat recovery and an integrated water softener

The AMX represents a significant step up in capability for high-volume kitchens where the machine runs hard throughout a full service. The GENIUS-X² fine filter system continuously cleans the wash water as the machine runs, removing food particles before they can redeposit onto clean ware and cutting detergent consumption by up to 35%. VISIOTRONIC-TOUCH controls use a colour touchscreen with single-button operation, intuitive for any member of staff. Hobart SmartConnect with integrated Wi-Fi allows machine status, wash data and fault alerts to be monitored remotely, which is particularly useful for multi-site operators, managed estates and public sector kitchens with central oversight requirements.

The hood-mounted control panel and full wraparound handle are standard across the Profi range, making the machine easy to operate from any position and in any configuration including corner installations.

The AMXR adds drain heat recovery, capturing thermal energy from outgoing waste water to pre-heat incoming cold water for the next cycle. On a machine running at volume throughout a long service the energy savings over a working year are considerable.

Hobart Profi AMX

Profi AMXX and AMXXL: greater throughput for the hardest-working kitchens

The Hobart Profi AMXX family steps up further still from the AMX. Available variants:

  • AMXX: 500×500mm rack, 440mm loading height, up to 70 racks per hour
  • AMXXS: as above, with integrated water softener
  • AMXXR: as AMXX, with drain heat recovery
  • AMXXRS: same as AMXXR but with an integrated water softener
  • AMXXL: XL wash chamber, 500×500mm - 600x500mm, 540mm loading height, up to 70 racks per hour
  • AMXXLS: as AMXXL, with integrated water softener

The AMXX carries the full Profi technology platform of the AMX and builds on it in several meaningful ways. The wash pump is uprated to 1.2kW compared to the AMX's 0.7kW, and the faster cycle times of 52 and 75 seconds, compared to the AMX's 60 and 90 seconds, deliver 70 racks per hour rather than 60. The tank capacity is also larger at 40 litres versus 23 litres on the AMX, supporting sustained operation under heavier demand. The AMXX is specifically designed for washing heavily soiled ware in fast programme cycles and is well suited to high utilisation in hospitality and foodservice environments. It also gains the ROTOR-X wash system and intelligent energy management not present on the AMX.

The AMXXL adds the XL wash chamber, increasing the loading height to 540mm and accommodating wash ware up to 600×500mm including display trays, baking trays, gastronorm containers and butchery boxes. For hotel banqueting, contract catering, bakery operations and large restaurant kitchens handling oversized ware, the AMXXL is the practical choice.

Hobart Profi AMXX

Premax AUP, AUPL and AUPRS: maximum performance for the most demanding kitchens

The Hobart Premax AUP range sits at the top of the Hobart pass-through lineup. It carries the full Profi technology platform as its foundation and adds the features that define Premax performance. Available variants:

  • AUP: 500×500mm rack, 440mm loading height, up to 70 racks per hour
  • AUPS: as above, with integrated water softener
  • AUPRS: as above, with integrated water softener and drain heat recovery
  • AUPL: XL wash chamber, 500×500mm - 600x500mm, 540mm loading height, up to 70 racks per hour
  • AUPLS: as AUPL, with integrated water softener

The defining Premax feature on pass-through machines is ASR automatic soil removal. This patented system continuously pumps food waste out of the machine during operation, preventing fine and coarse debris from contaminating the wash water or clogging the system. The practical effect is that pre-rinsing ware before loading becomes unnecessary, even with heavily soiled plates. On a kitchen team loading the machine continuously through a full service, removing that step saves measurable time and water, and means the wash tank does not need to be emptied and refilled during the shift. The machine regenerates itself as required, keeping results consistent from the first rack to the last.

The Premax range also brings an Intensive programme using hot steam to break down encrusted food residue, a POWER-PLUS wash programme that activates a second pump for 1,000 litres per minute wash performance on heavily soiled loads, and the fastest cycle times in the Hobart pass-through lineup at 52 seconds, increasing capacity by 17% to 70 racks per hour. Water consumption is reduced to 1.4 litres per rack in the ECO programme.

VAPOSTOP ER exhaust heat recovery is available as an option across both Profi and Premax pass-through models. It combines the fully enclosed hood with an integrated heat exchanger to capture steam energy and use it to pre-heat incoming fresh water, reducing total energy consumption by up to 10%.

The AUPRS combines the standard AUP specification with integrated water softener and drain heat recovery in a single unit, making it the most comprehensively specified standard-format Premax available. The AUPL and AUPLS provide the same Premax performance with the XL wash chamber for operations handling large-format ware.

The hood-mounted control panel and full wraparound handle are standard across the Premax range, as on the Profi, giving the same ease of operation in any layout or configuration.

Frequently Asked Questions

  • How many covers do I need to justify a pass-through dishwasher?

As a general guide, a pass-through dishwasher becomes the right choice once your kitchen is regularly serving 100 covers or more per service or running more than one sitting daily. Below that threshold an undercounter machine will typically keep pace. Above it, the continuous workflow of a pass-through reduces bottlenecks, takes pressure off the team and keeps clean ware moving to the pass throughout service. If your operation runs multiple services daily, or combines breakfast, lunch and dinner, the case for a pass-through is strong even at lower individual sitting numbers.

  • Can a Hobart pass-through dishwasher run left to right or right to left?

Yes. All Hobart pass-through dishwashers can be configured to run in either direction depending on your kitchen layout. They can also be installed in a straight run or corner-mounted, giving flexibility when fitting around an existing space.

  • How many racks per hour do Hobart pass-through dishwashers wash?

The Hobart Ecomax H604 washes up to 48 racks per hour. The Ecomax Plus H615 and the Profi AMX wash up to 60 racks per hour. The Profi AMXX, AMXXL and the full Premax AUP range achieve up to 70 racks per hour, with the Premax achieving this on a shortest cycle time of 52 seconds.

  • What is the difference between the Profi AMX and AMXX?

Both are Profi-specification machines with GENIUS-X², VISIOTRONIC-TOUCH and SmartConnect. The AMXX steps up with a more powerful 1.2kW wash pump versus the AMX's 0.7kW, faster cycle times of 52 and 75 seconds compared to 60 and 90 seconds, a larger 40-litre tank versus 23 litres, and a throughput of 70 racks per hour rather than 60. The AMXX also gains the ROTOR-X wash system and intelligent energy management. It is specifically designed for washing heavily soiled ware under high utilisation.

  • What is the AMXXL and who needs it?

The AMXXL is the large-chamber variant of the Profi AMXX. It shares all the AMXX performance features and adds an XL wash chamber with a 540mm loading height, accommodating wash ware up to 600×400mm including display trays, baking trays, gastronorm containers and butchery boxes. It is suited to bakery operations, contract catering, hotel banqueting kitchens and any operation regularly handling oversized ware.

  • What is ASR automatic soil removal on Hobart Premax pass-through dishwashers?

ASR is a patented Premax-exclusive system that continuously pumps food waste out of the machine during operation, preventing debris from contaminating the wash water. It eliminates the need to pre-rinse ware before loading, even with heavily soiled plates. The wash tank regenerates itself as required rather than needing to be emptied and refilled during a shift, keeping results consistent throughout a full service.

  • What does drain heat recovery mean on a Hobart pass-through dishwasher?

Drain heat recovery, indicated by the R suffix on models such as the AMXR and AUPRS, captures thermal energy from outgoing hot waste water at the end of each cycle and uses it to pre-heat the incoming cold water for the next. This reduces the energy required to reach operating temperature, lowering running costs across a full day of operation. Savings of up to 15% of total energy consumption are achievable compared to a model without this option.

  • What is VAPOSTOP ER and which models have it?

VAPOSTOP ER is an exhaust heat recovery option available across the Profi and Premax pass-through ranges. It combines the fully enclosed hood with an integrated heat exchanger to capture steam energy when the hood is closed and use it to pre-heat incoming fresh water. Benefits include a reduction in total energy consumption of up to 10%, no escaping steam when the hood is opened, and an improved working environment in the wash-up area.

  • Do I need tabling with a Hobart pass-through dishwasher?

Yes. A pass-through dishwasher requires inlet tabling on the dirty side and outlet tabling on the clean side. The inlet table typically includes a sink bowl and overhead spray arm for pre-rinsing. Without the correct tabling arrangement, the continuous workflow that makes a pass-through efficient cannot function properly. Hobart offers a full range of pass-through dishwasher tabling designed to integrate directly with its hood machines in straight-through and corner configurations.

  • Are Hobart pass-through dishwashers suitable for schools and care homes?

Yes. The Ecomax H604 and Ecomax Plus H615 are both well suited to education and care sector kitchens, particularly where cooking and cleaning cycles follow predictable mealtimes. The H615 is a strong choice for kitchens running two or more sittings daily. For larger sites such as secondary schools, university catering or care home kitchens with extended service periods, the Profi AMX brings the additional benefits of GENIUS-X² filtration, remote monitoring via SmartConnect and lower long-term running costs. Public sector and charity organisations should enquire about our discounted pricing.

  • Can I finance a Hobart pass-through dishwasher?

Yes. Interest-free credit over 12 and 24 months is available across the full Hobart pass-through dishwasher range, alongside fixed monthly rental plans. Both options are available at checkout or by contacting us directly.
